🍤 Garlic Butter Shrimp with Rice

Ingredients (Serves 2–3):

  • 1 lb large shrimp, peeled & deveined (tails on or off)

  • 2 Tbsp olive oil

  • 3 Tbsp butter, divided

  • 4 cloves garlic, minced

  • ½ tsp red pepper flakes (optional, for spice)

  • 1 Tbsp lemon juice (plus lemon wedges for serving)

  • 2 Tbsp fresh parsley, chopped (or 1 tsp dried parsley)

  • Salt & black pepper, to taste

  • 3 cups cooked white rice (jasmine, basmati, or brown rice)


Instructions:

  1. Prepare Shrimp

    • Pat shrimp dry with paper towels.

    • Season lightly with salt and black pepper.

  2. Cook Shrimp

    • In a large skillet, heat olive oil and 2 Tbsp butter over medium-high.

    • Add shrimp in a single layer. Cook 1–2 minutes per side until pink and opaque. Remove and set aside.

  3. Make Garlic Butter Sauce

    • In the same skillet, add remaining 1 Tbsp butter.

    • Stir in garlic and red pepper flakes, cooking 30 seconds until fragrant.

    • Add lemon juice and parsley, stirring well.

  4. Combine & Serve

    • Return shrimp to the skillet, tossing in the garlic butter sauce.

    • Serve immediately over hot cooked rice.
